Instructions
Step 1: Heat 1 tbsp olive oil in a large skillet over high heat until shimmering.
Step 2: Season steak bites with salt, pepper, and paprika. Sear in the hot skillet for 2-3 minutes per side until browned. Set aside.
Step 3: In the same skillet, add butter and minced garlic, cooking for 30 seconds until fragrant. Return steak bites to the pan and toss to coat.
Step 4: While the steak cooks, bake potato wedges at 425 degrees for 20-25 minutes until golden and crispy.
Step 5: Prepare the salad by tossing mixed greens with cherry tomatoes, cucumber slices, 1 tbsp olive oil, and vinegar.
Step 6: Plate steak bites and garnish with fresh parsley. Arrange potato wedges and salad on the same plate.
Storage and Reheating Tips
Store steak bites and potatoes separately in airtight containers in the refrigerator for up to 3 days. Keep the salad in its own container to prevent wilting.
Reheat steak bites gently in a skillet over medium heat for 2-3 minutes to maintain tenderness. Refresh potato wedges in a 350-degree oven for 5 minutes to restore crispiness.
For best results, enjoy the salad fresh or assemble it just before serving. The steak and potatoes can be prepped and reheated for quick weekday meals.
