Instructions
Step 1: Heat olive oil in a large skillet over medium-high heat until it shimmers.
Step 2: Add the steak cubes and sear for 2-3 minutes per side until browned. Season with salt and pepper as they cook.
Step 3: Once the steak is cooked, push it to the side of the skillet and add the butter and minced garlic to the empty space.
Step 4: Let the garlic butter cook for about 1 minute until fragrant, then stir it together with the steak pieces.
Step 5: Create two small wells in the steak mixture and crack the eggs directly into them.
Step 6: Cook until the eggs reach your desired doneness, about 3-4 minutes for sunny-side up.
Step 7: Top with fresh parsley and red pepper flakes, then serve immediately.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep the eggs separate if possible to prevent them from becoming rubbery.
Reheat the steak gently in a skillet over low heat with a splash of water to retain moisture. Add fresh eggs if you’d like, rather than reheating the original ones.
This dish is best enjoyed fresh, but the steak portion makes a great addition to salads or grain bowls the next day.
