Step 1: Wash and peel the potatoes if desired, then slice them thinly using a mandoline or sharp knife.
Step 2: Place the potato slices in a bowl of cold water for 20 minutes to remove excess starch.
Step 3: Drain the potatoes and pat them completely dry with paper towels.
Step 4: Heat vegetable oil in a deep skillet or fryer to 350°F.
Step 5: Fry the potato slices in small batches for 2–3 minutes until golden brown and crispy.
Step 6: Remove the chips with a slotted spoon and place them on paper towels to drain excess oil.
Step 7: In a small bowl, mix together the garlic powder, onion powder, parsley, dill, paprika, salt, and black pepper.
Step 8: While the chips are still warm, drizzle lightly with olive oil and toss with the seasoning mixture.
Step 9: Let the chips cool slightly before serving for maximum crispiness.
Storage and Reheating Tips
Store the potato chips in an airtight container at room temperature for up to 5 days.
Keep them away from moisture to maintain their crisp texture.
If the chips lose some crunch, reheat them in the oven at 300°F for 5 minutes.
Avoid refrigerating the chips, as this can make them soft and stale.
