step 1 Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. /n
step 2 In a large bowl, combine olive oil, melted butter, minced garlic, Italian seasoning, salt, pepper, paprika, and thyme. /n
step 3 Add the cut potatoes to the bowl and toss until evenly coated. /n
step 4 Spread the potatoes in a single layer on the prepared baking sheet. /n
step 5 Roast for 35–40 minutes, flipping halfway through, until golden brown and crispy on the outside. /n
step 6 Remove from the oven and sprinkle with fresh parsley. /n
step 7 Serve warm.
Storage and Reheating Tips
Store leftover potatoes in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 375°F (190°C) or in an air fryer to restore crispiness. Avoid microwaving if possible, as it may make them soft.
