Instructions
Step 1: Preheat oven to 400°F (200°C).
Step 2: In a large oven-safe skillet, heat olive oil over medium-high heat. Season pork chops with salt, pepper, and dried thyme.
Step 3: Sear pork chops in the skillet for 2-3 minutes per side until golden brown. Remove from skillet and set aside.
Step 4: In the same skillet, melt butter and add garlic. Sauté for 1 minute until fragrant.
Step 5: Add halved baby potatoes and stir to coat in the garlic butter. Cook for 5 minutes, stirring occasionally.
Step 6: Sprinkle potatoes with cheddar and Parmesan cheese. Return pork chops to the skillet, placing them on top.
Step 7: Transfer the skillet to the oven and bake for 15-20 minutes, until the pork chops are cooked through and potatoes are tender.
Step 8: Garnish with chopped parsley before serving.
Storage Information
Refrigerate leftovers in an airtight container for up to 4 days. Reheat in the oven or microwave until warmed through. Avoid freezing, as the cheese and potatoes may change in texture.
