Instructions
Step 1: Preheat oven to 425°F (220°C). Line a baking sheet with foil or parchment paper and lightly grease.
Step 2: In a large bowl, whisk together olive oil, garlic, lime juice, lime zest, cumin, paprika, chili powder, salt, and pepper.
Step 3: Add drumsticks to the bowl and toss until well coated. Let marinate for 15–30 minutes if time allows.
Step 4: Arrange drumsticks on the prepared baking sheet in a single layer.
Step 5: Roast for 35–40 minutes, turning halfway through, until the chicken is cooked through and the skin is crispy and golden.
Step 6: Remove from oven and let rest for a few minutes. Garnish with chopped cilantro and serve with lime wedges.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) for 10–15 minutes until warmed through. You can also enjoy them cold for an easy protein-packed snack!
