Step 2: In a small bowl, mix melted butter, olive oil, minced garlic, rosemary, thyme, paprika, salt, pepper, and lemon juice.
Step 3: Arrange the chicken quarters and halved potatoes on the baking sheet. Brush or drizzle the garlic butter mixture generously over everything.
Step 4: Roast in the oven for 45-55 minutes, or until the chicken skin is crispy and the internal temperature reaches 165°F (74°C). Toss the potatoes halfway through for even browning.
Step 5: Let rest for 5 minutes before serving. Spoon the pan juices over the chicken and potatoes for extra flavor.
