Instructions
Step 1: Cook the tortellini according to package directions. Drain and rinse with cold water to cool.
Step 2: In a large bowl, combine tortellini, cherry tomatoes, cucumber, red onion, black olives, bell pepper, and feta.
Step 3: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper to make the dressing.
Step 4: Pour the dressing over the salad and toss gently to combine. Sprinkle with fresh dill.
Step 5: Chill in the refrigerator for at least 30 minutes before serving to let flavors meld.
Storage Information
Store Greek Tortellini Pasta Salad in an airtight container in the refrigerator for up to 3 days. Stir before serving, and add a splash of olive oil or extra dressing if needed to refresh the salad.
