Step 1: Wash and pat dry the chicken drumsticks. In a bowl, combine olive oil, salt, black pepper, paprika, garlic powder, onion powder, oregano, and chili flakes.
Step 2: Rub the seasoning mixture all over the chicken drumsticks and let them marinate for at least 30 minutes.
Step 3: Peel and cut the potatoes into fries. Soak them in cold water for 20 minutes, then drain and pat dry.
Step 4: Heat vegetable oil in a deep fryer or large pot to 350°F. Fry the potatoes in batches until lightly golden, then remove and rest for a few minutes.
Step 5: Increase the oil temperature to 375°F and fry the potatoes again until crispy and golden brown. Season lightly with salt.
Step 6: Preheat a grill pan or outdoor grill over medium heat. Grill the chicken drumsticks for 25 to 30 minutes, turning occasionally, until fully cooked and charred in spots.
Step 7: Brush the grilled chicken with melted butter during the last few minutes of cooking for extra flavor and shine.
Step 8: In a salad bowl, combine lettuce, cucumber, tomatoes, and red onion. Toss gently with your favorite salad dressing.
Step 9: Arrange the grilled chicken drumsticks, fries, salad, and ketchup on serving plates or containers. Serve immediately while warm.
