Instructions
Step 1: Spread mayonnaise on one side of each bread slice (this helps get a golden, crispy crust when grilled).
Step 2: Spread peanut butter on the opposite side of two slices of bread.
Step 3: Layer banana slices evenly over the peanut butter. Sprinkle with a pinch of sea salt if desired.
Step 4: Top with the remaining bread slices, mayonnaise side out, to form two sandwiches.
Step 5: Heat a skillet over medium heat. Place the sandwiches in the skillet and grill until golden brown on one side, about 3-4 minutes.
Step 6: Flip and grill the other side for another 3-4 minutes, until both sides are crispy and the peanut butter is melty.
Step 7: Slice in half and serve warm.
Storage Information
These sandwiches are best enjoyed fresh off the skillet. However, you can store leftovers wrapped in foil in the refrigerator for up to 1 day. Reheat in a skillet or toaster oven for best results. Not recommended for freezing as the banana texture may change.
