Grilled Zucchini Mozzarella Wraps

Instructions

Step 1: Preheat a grill or grill pan over medium heat. Brush the zucchini slices with olive oil and sprinkle with garlic powder, salt, and pepper.

Step 2: Grill the zucchini slices for about 2 minutes per side, until tender and grill marks appear. Remove and let cool slightly.

Step 3: Lay two grilled zucchini slices in a crisscross pattern. Place a slice of mozzarella in the center.

Step 4: Fold each end of the zucchini over the cheese to form a neat wrap. Repeat with remaining zucchini and mozzarella.

Step 5: Optional: Place the wraps back on the grill for 1-2 minutes just to warm the cheese, being careful not to overcook.

Step 6: Serve warm with a side of marinara sauce for dipping.

Storage Information

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or warm skillet until the cheese is melted again. These wraps are best enjoyed fresh but can also be served cold as a snack.
