Grits Bowls (Cheese Grits and Sweet Grits)

Instructions

Step 1. In a medium saucepan, bring the water and salt to a boil.

Step 2. Slowly whisk in the grits and reduce the heat to low. Cook for 20–25 minutes, stirring frequently, until thick and creamy.

Step 3. Divide the cooked grits evenly between two bowls.

Step 4. For the cheese grits bowl, stir butter, cheddar cheese, heavy cream, and black pepper into one portion of grits until smooth and creamy.

Step 5. For the sweet grits bowl, stir butter, sugar, cinnamon, and milk into the second portion of grits until fully incorporated.

Step 6. In a bowl, whisk together the eggs, milk, salt, and pepper.

Step 7. Melt butter in a skillet over medium-low heat and cook the eggs, stirring gently until soft and fluffy.

Step 8. Sprinkle cheddar cheese over the eggs and allow it to melt before removing from the heat.

Step 9. Shape the sausage into patties and season with black pepper and garlic powder.

Step 10. Cook the sausage patties in a skillet over medium heat for 4–5 minutes per side or until fully cooked.

Step 11. In a shallow dish, combine the cornmeal, flour, paprika, garlic powder, salt, and black pepper.

Step 12. Dredge the fish fillets in the cornmeal mixture until evenly coated.

Step 13. Heat vegetable oil in a skillet and fry the fish for 3–4 minutes per side until golden brown and cooked through.

Step 14. Fill one bowl with the cheese grits and top with scrambled eggs, sausage patties, and a piece of fried fish.

Step 15. Fill the second bowl with the sweet grits and serve with scrambled eggs, sausage patties, and fried fish on the side.

Step 16. Serve immediately while hot.

Storage and Reheating Tips

Store leftover grits, eggs, sausage, and fish separately in airtight containers in the refrigerator for up to 3 days.

Reheat grits on the stovetop or in the microwave with a splash of milk or water to restore their creamy texture.

Warm sausage and fish in a 350°F (175°C) oven or air fryer for best results.

Avoid overheating scrambled eggs, as they can become dry.

Freshly made grits provide the best texture and flavor.
