Instructions
Step 1 Preheat oven to 400°F (200°C).
Step 2 In a bowl, mix olive oil, garlic, parsley, thyme, paprika, salt, and black pepper.
Step 3 Rub the seasoning mixture evenly over the chicken drumsticks.
Step 4 Place chicken on a baking tray and roast for 35–40 minutes until golden brown and fully cooked.
Step 5 Meanwhile, boil the potatoes in salted water for 15–20 minutes until fork-tender.
Step 6 Drain the potatoes, then mash with butter, milk, garlic powder, salt, and pepper until smooth and creamy.
Step 7 In a pan, melt butter and add carrots. Cook over medium heat for 8–10 minutes until tender.
Step 8 Sprinkle sugar over the carrots and cook for another 2–3 minutes until lightly glazed.
Step 9 Plate the mashed potatoes, carrots, and roasted chicken. Garnish with parsley if desired and serve warm.

Reheat chicken in the oven or air fryer to maintain crispiness.
