High-Protein Chicken Power Bowl

Instructions

Step 1: Pat the chicken breasts dry with paper towels. In a small bowl, combine paprika, garlic powder, onion powder, black pepper, and salt.

Step 2: Rub the seasoning mixture evenly all over both chicken breasts.

Step 3: Heat olive oil in a large skillet over medium-high heat. Once hot, place the seasoned chicken in the pan.

Step 4: Cook for 6-7 minutes on the first side until golden brown, then flip and cook for another 6-7 minutes until the internal temperature reaches 165F.

Step 5: Remove the chicken from the skillet and let it rest for 5 minutes, then slice into strips.

Step 6: While the chicken cooks, boil your eggs (about 10-12 minutes for hard boiled) and steam or roast the baby potatoes until tender, about 15-20 minutes.

Step 7: Steam or blanch the broccoli florets for 3-4 minutes until bright green and tender-crisp.

Step 8: Assemble your bowls by arranging the sliced chicken, halved eggs, potatoes, broccoli, corn, and shredded carrots on a plate.

Storage and Reheating Tips

This bowl is perfect for meal prep. Store individual portions in airtight containers in the refrigerator for up to 4 days. Keep the dressing or any sauce separate to prevent sogginess.

To reheat, simply microwave the bowl for 1-2 minutes until warmed through. The chicken and veggies reheat beautifully without drying out.

For best results, eat the eggs cold or at room temperature rather than reheating them. You can also enjoy this bowl cold straight from the fridge on busy days.
