Instructions

Step 1: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.

Step 2: In a large bowl, whisk together eggs, milk, salt, and pepper.

Step 3: In the baking dish, layer the diced potatoes, ham, cheddar cheese, mozzarella cheese, and green onions.

Step 4: Pour the egg mixture evenly over the top, making sure it seeps into all layers.

Step 5: Bake uncovered for 45–50 minutes, or until the center is set and the top is golden and bubbly.

Step 6: Let rest for 10 minutes before slicing and serving.

Storage Information

Store leftovers in the refrigerator for up to 4 days. Reheat individual portions in the microwave or oven. This casserole can also be made ahead and refrigerated overnight before baking. For longer storage, freeze baked portions and thaw overnight before reheating.
