Instructions:
Step 1: Line a baking sheet with parchment paper. Place 6 cookies bottom-side up on the sheet.
Step 2: Using an ice cream scoop, place a generous scoop of vanilla ice cream on each cookie.
Step 3: Top each scoop with another cookie, gently pressing down to spread the ice cream evenly to the edges.
Step 4: Roll the sides of each sandwich in mini chocolate chips and mini candy-coated chocolates, pressing gently so they stick.
Step 5: Wrap each sandwich in parchment paper or plastic wrap and freeze for at least 2 hours, or until firm.
Storage Information:
Store wrapped ice cream sandwiches in the freezer for up to 1 week. For best texture, allow them to sit at room temperature for 2–3 minutes before serving.
