Instructions
step 1 Boil red potatoes in salted water for 15-20 minutes until fork-tender. Drain and gently smash with a fork. Add butter, parsley, salt, and pepper. Cover and keep warm.
step 2 While potatoes are boiling, season salmon fillets with salt and pepper.
step 3 In a small bowl, mix honey, soy sauce, garlic, and lemon juice.
step 4 Heat olive oil in a skillet over medium heat. Sear salmon skin-side down for 3-4 minutes, flip, then pour honey garlic mixture over the salmon.
step 5 Cook for another 3-4 minutes, spooning sauce over the fillets until cooked through and glazed. Remove from heat.
step 6 In another pan, heat olive oil over medium heat. Add garlic and broccolini. Sauté for 5-6 minutes until tender-crisp. Season with salt and pepper.
step 7 Plate the salmon with smashed potatoes and garlic broccolini. Spoon remaining glaze over the salmon and garnish with parsley.
Storage and Reheating Tips
Store leftovers in separate airtight containers for up to 2 days. Reheat salmon gently in a skillet over low heat or in the oven at 300°F to maintain moisture. Potatoes and broccolini can be reheated in the microwave or on the stovetop with a splash of water or butter.
