Instructions

Step 1 Preheat the oven to 375°F (190°C) and line a roasting pan with aluminum foil for easy cleanup. /n
Step 2 Pat the pork loin dry with paper towels and season all sides with salt, black pepper, smoked paprika, and dried thyme. /n
Step 3 In a small bowl, whisk together minced garlic, honey, soy sauce, Dijon mustard, olive oil, and apple cider vinegar until well combined. /n
Step 4 Place the seasoned pork loin in the prepared roasting pan and brush generously with half of the honey garlic glaze. /n
Step 5 In a separate bowl, toss the apple wedges with brown sugar, cinnamon, nutmeg, and melted butter until evenly coated. /n
Step 6 Arrange the seasoned apples around the pork roast in the pan. /n
Step 7 Roast in the preheated oven for 50–70 minutes, basting the pork with the remaining glaze halfway through cooking, until the internal temperature reaches 145°F (63°C). /n
