Honey Glazed Chicken Drumsticks with Rice & Corn

Instructions

Step 1: Cook your rice according to package directions, then fluff with a fork and set aside.

Step 2: In a small bowl, whisk together honey, soy sauce, minced garlic, paprika, and dried parsley until combined.

Step 3: Heat olive oil in a large skillet over medium-high heat and season drumsticks generously with salt and pepper.

Step 4: Brown the drumsticks on all sides, about 3 to 4 minutes per side, until golden.

Step 5: Pour the honey glaze over the drumsticks and reduce heat to medium-low, simmering for 12 to 15 minutes until cooked through and the glaze is thick and glossy.

Step 6: While the chicken finishes cooking, warm the corn kernels in a small pan and season with salt and pepper.

Step 7: Plate the rice in the center, top with glazed drumsticks, and arrange the corn on the side. Drizzle any remaining glaze over everything and serve hot.

Storage and Reheating Tips

Store leftover chicken and rice separately in airtight containers in the refrigerator for up to 3 days. This keeps the rice from becoming soggy and helps everything stay fresh.

To reheat, place the drumsticks on a baking sheet and warm in a 350°F oven for about 10 minutes until heated through. Reheat rice in the microwave with a splash of water to restore moisture.

This dish also freezes well for up to 2 months. Just thaw overnight in the refrigerator before reheating for best results.
