Honey Glazed Chicken with Rice & Avocado Garden Salad

Instructions

Step 1: Start by cooking the rice. Combine 1 cup white rice with 2 cups water and a pinch of salt in a pot. Bring to a boil, then reduce heat, cover, and simmer for 15-18 minutes until tender and fluffy.

Step 2: While the rice cooks, prepare the chicken. Pat the chicken thighs dry with paper towels.

Step 3: In a small bowl, mix together the garlic powder, paprika, salt, and black pepper.

Step 4: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Season the chicken thighs generously with the spice mixture on both sides.

Step 5: Place the chicken skin-side down in the hot skillet. Cook for 5-6 minutes until golden brown and crispy.

Step 6: Flip the chicken and cook for another 4-5 minutes on the other side.

Step 7: Drizzle the honey over the chicken and toss gently to coat. Continue cooking for 2-3 minutes until the honey caramelizes and the chicken is cooked through, with an internal temperature of 165F.

Step 8: While everything cooks, prepare the salad. Arrange romaine lettuce on a plate and top with sliced avocado, cucumber, tomato chunks, and red onion.

Step 9: Drizzle the salad with 1 tbsp olive oil and 1 tbsp lemon juice. Season with salt and pepper to taste.

Step 10: Once the rice is done, fluff it with a fork and mound it onto your plate next to the salad.

Step 11: Place the glazed chicken thighs on top of the salad greens or beside the rice. Serve immediately while everything is warm.

Storage and Reheating Tips

Store leftover chicken and rice separately from the salad in airtight containers in the refrigerator for up to 3 days. The salad is best enjoyed fresh, so prepare it just before eating.

To reheat the chicken, place it in a skillet over medium heat with a splash of water for 3-4 minutes until warmed through. You can also microwave it covered for 1-2 minutes.

Reheat rice in the microwave with a sprinkle of water, or warm it gently in a pot over low heat, stirring occasionally.

For meal prep, assemble the salad without the avocado or dressing, and add those fresh elements when you’re ready to eat.
