step 1 Preheat your oven to 400°F (200°C). Scrub the potatoes clean, then prick them several times with a fork.
step 2 Rub each potato with olive oil and a pinch of salt. Place directly on the oven rack or on a baking tray and bake for 1 hour, or until crisp on the outside and fluffy inside.
step 3 While the potatoes bake, heat the baked beans in a small saucepan over medium heat until warmed through. Stir occasionally.
step 4 Once the potatoes are done, cut a cross into the top of each one and gently squeeze the sides to open them up. Add a little butter if using.
step 5 Spoon over a generous portion of hot baked beans.
step 6 Top each potato with a large handful of grated cheddar cheese. Serve hot with freshly ground black pepper.
Storage and Reheating Tips
Store any leftover baked potatoes (unfilled) in the fridge for up to 3 days. Reheat in the oven to retain their crisp skin. Beans can be stored separately and reheated in the microwave or on the stove. Add fresh cheese just before serving.
