Jacket Potatoes

Instructions:
step 1 Preheat oven to 400°F (200°C).
step 2 Scrub the potatoes clean under running water and dry thoroughly.
step 3 Prick each potato several times with a fork to allow steam to escape.
step 4 Rub the skins with olive oil and sprinkle with sea salt and black pepper.
step 5 Place potatoes directly on the oven rack or on a baking sheet and bake for 45-60 minutes, or until the skins are crisp and a knife easily pierces the center.
step 6 Remove from oven and let cool for 5 minutes.
step 7 Slice open the tops, fluff the insides with a fork, and add a pat of butter if desired.
step 8 Serve with your favorite toppings.

Storage and Reheating Tips:
Store leftover jacket potatoes in the refrigerator for up to 3 days. To reheat, bake in a 350°F (175°C) oven for 15-20 minutes until heated through. You can also microwave, but the skin may lose crispness.
