Juicy Mediterranean Meatball Bowl with Tzatziki & Herbed Rice

Instructions

Step 1: In a large bowl, combine all meatball ingredients (except olive oil). Mix until just combined. Roll into 1-inch balls.

Step 2: Heat olive oil in a skillet over medium heat. Cook meatballs in batches, turning occasionally, until browned and cooked through, about 8–10 minutes.

Step 3: In a small bowl, mix all tzatziki sauce ingredients. Adjust seasoning to taste. Chill until ready to use.

Step 4: In a bowl, mix cooked rice with parsley, dill, lemon juice, and salt.

Step 5: Assemble bowls with a base of herbed rice. Top with meatballs, bell peppers, cucumber, and a generous dollop of tzatziki.

Step 6: Garnish with additional parsley and serve.

Storage Information

Store meatballs, rice, and veggies in separate airtight containers in the refrigerator for up to 4 days. Tzatziki can be stored in a sealed container for up to 3 days. Reheat meatballs and rice before serving; serve with fresh veggies and cold tzatziki.
