Instructions
Step 1: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Step 2: Spread the shredded Monterey Jack cheese into 6 even rectangular piles on the baking sheet. Bake for 5-7 minutes, or until the cheese is melted and bubbling with golden edges. Remove and let cool slightly until just pliable.
Step 3: While the cheese is baking, heat olive oil in a skillet over medium heat. Add sliced onions and bell pepper, cooking until soft and slightly caramelized, about 5 minutes. Remove from skillet and set aside.
Step 4: In the same skillet, add ground beef and cook until browned. Season with garlic powder, onion powder, salt, and pepper. Stir in the cooked onions and peppers.
Step 5: Place a spoonful of the meat mixture onto each cheese rectangle and gently roll them up.
Step 6: Garnish with fresh parsley if desired and serve immediately.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or a nonstick skillet until warmed through. Avoid microwaving to maintain texture.
