step 1 Cut the quarter loaf of bread and hollow out the soft center to create space for the fillings.
step 2 Layer the base with cooked French fries and season with a little salt.
step 3 Slice the cooked sausage and place it over the fries.
step 4 Add the cheese slices on top of the sausage while still warm so they melt slightly.
step 5 Drizzle peri-peri sauce, mayonnaise, cheese sauce, and optional tomato sauce generously over the layers.
step 6 Place a piece of the hollowed bread on top or serve open-style.
step 7 Skewer with a toothpick or small stick to hold it all together if needed, and serve immediately.
Storage and Reheating Tips.
Kota is best enjoyed fresh due to the sauces and fries, which can make the bread soggy over time. If needed, store components separately in the fridge for up to 1 day. Reheat the fries and sausage in a pan or oven, then assemble the kota just before eating. Avoid microwaving to keep the textures intact.
