Instructions

step 1 Slice the quarter loaf horizontally and remove most of the soft inner bread to create a pocket.
step 2 Cook French fries until golden and crispy. Season with salt and set aside.
step 3 Fry or grill the beef patty or boerewors until cooked through.
step 4 Lightly fry the slices of polony until crisped on the edges.
step 5 If using, fry an egg sunny side up and season with salt and pepper.
step 6 Lightly toast the inside of the hollowed-out bread for extra crunch.
step 7 Begin layering: start with fries at the bottom, followed by cheese, beef patty, fried egg, polony, and lettuce.
step 8 Drizzle generously with BBQ sauce and mayo (and add atchar if using).
step 9 Close the kota with the top piece of bread and press slightly to help everything hold together.
step 10 Serve hot and enjoy with napkins—it gets messy!

Storage and Reheating Tips

Kota is best enjoyed fresh and hot. If needed, store components separately and assemble before serving. Reheat fries and meats in the oven or a skillet for best texture. Avoid microwaving to prevent sogginess, especially of the bread.
