Kota (South African Street Sandwich)

Instructions

step 1 Cut a quarter from a full loaf of white bread and hollow out the center, creating space for fillings while leaving the base intact.
step 2 Optional: Lightly butter and toast the inside of the bread on a pan or griddle for added crispness.
step 3 Start layering with a drizzle of tomato sauce, mayo, or atchar at the base.
step 4 Add a layer of fries, followed by shredded lettuce.
step 5 Stack on the cooked bacon and sliced beef or sausage.
step 6 Top with a slice of cheese and the fried egg if using.
step 7 Add more sauce over the top and replace the hollowed bread or a slice of toasted bread as the lid.
step 8 Press gently, secure with a skewer or toothpick, and serve hot.

Storage and Reheating Tips.

Kota is best eaten fresh due to the mix of crispy and saucy textures. If you must store it, wrap it in foil and refrigerate for up to 1 day. Reheat briefly in a toaster oven or air fryer to regain some crispness—avoid the microwave, as it may make the bread soggy.
