Kota (South African Street Sandwich)

Instructions

step 1 Slice the quarter loaf of bread and hollow out the center, leaving the base and sides intact to form a pocket.
step 2 Cook burger patties in a skillet or on a grill with a little oil until fully cooked and browned, about 3-4 minutes per side.
step 3 Grill or fry sausages until heated through and nicely browned.
step 4 If using, layer lettuce, tomato, and onion into the bottom of the bread pocket.
step 5 Add the sausages and top with burger patties. Place cheese slices in between or on top of patties.
step 6 Drizzle mayonnaise, ketchup, and spicy sauce or atchar over the meat and cheese layers.
step 7 Cover with the removed bread top and gently press down to compact the kota. Serve immediately while warm.

Storage and Reheating Tips

Kota is best enjoyed fresh, but leftovers can be stored wrapped in foil or in an airtight container in the fridge for up to 1 day. Reheat in the oven at 350°F (175°C) until warmed through. Avoid microwaving to keep the bread from getting soggy.
