Kota, also known as a “quarter” or “bunny chow” in some areas, is a legendary South African street food. It’s a hearty, flavor-packed sandwich made with a hollowed-out quarter loaf of bread and filled to the brim with everything from fries and sausage to cheese, sauces, and more. It’s messy, indulgent, and incredibly satisfying.

Ingredients

1/4 loaf white bread, uncut
1/2 cup cooked and seasoned fries
1/4 cup shredded lettuce
2-3 slices tomato
1/4 cup grated cheddar cheese
2-3 slices of polony or bologna sausage (or any sausage of choice)
2 slices grilled steak or chicken (optional but popular addition)
1 fried egg (optional)
1-2 tablespoons atchar (South African-style spicy pickled relish)
Tomato sauce (ketchup), to taste
Peri-peri or chili sauce, to taste
Mayonnaise or cheese sauce, to taste
