Instructions:
Step 1: Preheat oven to 350°F (175°C). Grease an 8-inch square baking pan.
Step 2: In a mixing bowl, beat the sugar and eggs together until light and fluffy.
Step 3: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the egg mixture and mix until combined.
Step 4: In a small saucepan, heat the milk and butter until butter is melted. Stir into the batter along with vanilla extract.
Step 5: Pour the batter into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Step 6: While the cake is baking, prepare the topping by combining butter, brown sugar, cream, and coconut in a saucepan over medium heat. Stir until the mixture is smooth and bubbly.
Step 7: Remove cake from oven and turn the broiler on. Spread the coconut topping evenly over the hot cake. Broil for 1–2 minutes until the top is golden and bubbling. Watch closely to prevent burning.
