Lemon Lavender Cookies

Instructions

Step 1 Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2 In a bowl, whisk together the flour, baking powder, and salt.
Step 3 In another bowl, cream the butter and sugar until light and fluffy.
Step 4 Beat in the egg, lemon zest, lemon juice, lavender, and vanilla extract until well combined.
Step 5 Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
Step 6 Scoop tablespoon-sized portions of dough, roll into balls, and place on the prepared baking sheet.
Step 7 Flatten slightly and bake for 10 to 12 minutes, or until the edges are lightly golden.
Step 8 Allow cookies to cool completely before glazing.
Step 9 In a small bowl, mix powdered sugar with lemon juice and milk until smooth to create the glaze.
Step 10 Spread or drizzle the glaze over the cooled cookies and let it set before serving.

Storage and Reheating Tips

Store cookies in an airtight container at room temperature for up to 5 days.
For longer storage, freeze unglazed cookies for up to 2 months and glaze after thawing.
If desired, bring cookies to room temperature before serving for the best texture and flavor.
Avoid refrigerating, as it may dry out the cookies.
