Lemon Sugar Cookies

Instructions

Step 1: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2: In a bowl, whisk together the flour, baking soda, baking powder, and salt.
Step 3: In another bowl, cream together the butter and sugar until light and fluffy.
Step 4: Add the egg, lemon zest, lemon juice, and vanilla extract, mixing until combined.
Step 5: Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
Step 6: Scoop small portions of dough and roll them into balls.
Step 7: Roll each ball in granulated sugar and place on the prepared baking sheet.
Step 8: Slightly flatten each cookie with your hand or the bottom of a glass.
Step 9: Bake for 10–12 minutes until the edges are set but the centers remain soft.
Step 10: Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Storage and Reheating Tips

Store cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze for up to 2 months. To enjoy warm, heat briefly in the microwave for a few seconds.
