Instructions
Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2: Slice red potatoes into 1/4-inch rounds. Toss with melted butter, garlic powder, paprika, salt, and pepper.
Step 3: Arrange potato slices in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway, until golden and tender.
Step 4: Remove from oven and sprinkle shredded cheddar cheese and crumbled bacon evenly over the rounds. Return to oven for 5 minutes until cheese is melted.
Step 5: Garnish with sliced green onions. Serve warm with sour cream if desired.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) until warmed through. For best texture, avoid microwaving as it may soften the crispy edges.
