Instructions:
step 1 Preheat the oven to 400°F (200°C). Scrub the potatoes clean, prick them with a fork, rub with olive oil, and sprinkle with sea salt. Place directly on the oven rack and bake for 50-60 minutes or until fork-tender.
step 2 While the potatoes are baking, heat a skillet over medium-high heat. Add a bit of oil and sear the steak bites for 2-3 minutes per side or until desired doneness. Remove and set aside.
step 3 In the same skillet, add shrimp and Cajun seasoning. Cook for 2-3 minutes per side until shrimp are opaque and cooked through. Remove from heat.
step 4 Once potatoes are done, carefully slice them open lengthwise and fluff the insides with a fork.
step 5 In a small saucepan, combine butter, sour cream, milk, garlic powder, and black pepper over low heat until smooth and warm.
step 6 Pour the mixture into the fluffed potato centers. Add cooked broccoli, then top with steak and shrimp.
step 7 Sprinkle cheddar and mozzarella cheeses over each potato. Return to the oven for 5-10 minutes until cheese is melted and bubbly.
step 8 Top with crumbled bacon and green onions if using. Serve hot.
