Instructions:
step 1 Preheat oven to 200°C (400°F). Scrub potatoes, dry, rub with olive oil and salt, and prick with a fork.
step 2 Bake potatoes directly on the oven rack for 50–60 minutes until crispy outside and fluffy inside.
step 3 While potatoes bake, season steak and shrimp with garlic powder, paprika, salt, and pepper.
step 4 Heat a skillet over medium-high heat with a drizzle of oil. Sear steak cubes for 2–3 minutes until browned but tender. Remove and set aside.
step 5 In the same pan, cook shrimp for 1–2 minutes per side until pink and opaque.
step 6 When potatoes are done, slice them open and fluff the insides with a fork. Add a small pat of butter if desired.
step 7 Layer with shredded cheese, steak cubes, shrimp, broccoli, and bacon bits. Top with additional cheese if preferred.
step 8 Return loaded potatoes to the oven or broiler for 3–5 minutes to melt cheese.
step 9 Serve hot, optionally garnished with herbs or sour cream.
Storage and Reheating Tips:
Store leftover stuffed potatoes in an airtight container in the fridge for up to 2 days. Reheat in the oven at 180°C (350°F) until warmed through. For microwave, heat on medium power to avoid overcooking the shrimp and steak.
