Instructions
Step 1: Preheat the oven to 425°F (220°C).
Step 2: In a bowl, combine the olive oil, salt, black pepper, garlic powder, onion powder, paprika, parsley, and thyme. Coat the chicken drumsticks evenly with the seasoning mixture.
Step 3: Arrange the drumsticks on a baking sheet and roast for 35–40 minutes, or until golden brown and the internal temperature reaches 165°F (74°C).
Step 4: Toss the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, stirring halfway through cooking.
Step 5: Prepare the fries according to package directions or bake until crispy and golden.
Step 6: Place the potatoes for the mashed potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 15–20 minutes.
Step 7: Drain the potatoes and mash with butter, milk, salt, and pepper until smooth and creamy. Keep warm.
Step 8: In a skillet over medium heat, melt the butter for the carrots. Add the carrots, honey, salt, and pepper and cook for 8–10 minutes until tender and glazed.
Step 9: For the gravy, melt the butter in a saucepan over medium heat. Whisk in the flour and cook for 1 minute.
Step 10: Gradually whisk in the chicken broth until smooth. Stir in the heavy cream, garlic powder, onion powder, salt, and pepper.
Step 11: Simmer for 4–5 minutes, stirring frequently, until the gravy thickens.
Step 12: To assemble, place a layer of fries in each serving bowl and spoon some gravy over them.
Step 13: Add the mashed potatoes, roasted potatoes, and honey-glazed carrots around the bowl.
Step 14: Top with the roasted chicken drumsticks and drizzle generously with additional gravy.
Step 15: Garnish with fresh parsley and serve immediately.
Storage and Reheating Tips
Store leftovers in separate airtight containers in the refrigerator for up to 4 days.
Reheat chicken in a 350°F (175°C) oven until warmed through.
Warm the gravy on the stovetop, adding a splash of broth if it becomes too thick.
Mashed potatoes can be reheated with a little milk or butter to restore their creamy texture.
For best results, store fries separately and reheat in an air fryer or oven to maintain crispness.
