Step 1: In a saucepan over medium heat, combine water, butter, sugar, and salt. Bring the mixture to a gentle boil.
Step 2: Add the flour all at once and stir vigorously until a smooth dough forms and pulls away from the sides of the pan.
Step 3: Remove the dough from heat and let it cool for 5 minutes.
Step 4: Beat in the eggs one at a time, then add vanilla extract. Mix until the dough becomes smooth and glossy.
Step 5: Transfer the dough to a piping bag fitted with a large star tip.
Step 6: Heat vegetable oil in a deep pot to 350°F. Pipe strips of dough directly into the hot oil and fry until golden brown and crispy on all sides.
Step 7: Remove the churros from the oil and drain briefly on paper towels.
Step 8: Mix the cinnamon and sugar together in a shallow bowl, then roll the warm churros in the mixture until fully coated.
Step 9: Fill some churros with chocolate sauce, caramel sauce, or vanilla cream using a piping bag fitted with a narrow tip.
Step 10: Decorate the churros with sprinkles, crushed cookies, whipped cream, or extra sauce as desired.
Step 11: Serve warm for the best flavor and texture.
