step 1 Toast the slices of artisan bread to your desired crispness.
step 2 While the bread is toasting, mash the avocado in a bowl with a pinch of salt and black pepper.
step 3 Fry the eggs sunny-side up in a nonstick skillet until the whites are set but yolks remain runny.
step 4 Spread mashed avocado evenly over each slice of toast.
step 5 Top each avocado toast with a fried egg.
step 6 Arrange halved cherry tomatoes and capers on the side of the plate.
step 7 Add smoked salmon to the plate if using.
step 8 Drizzle a bit of olive oil over the tomatoes or salmon if desired.
step 9 Finish with a sprinkle of freshly ground black pepper on everything.

Storage and Reheating Tips:
Best enjoyed fresh. You can prep mashed avocado and slice tomatoes in advance, storing them in separate airtight containers in the fridge. Fry eggs and toast bread just before serving. Not suitable for reheating once assembled.
