Instructions
Step 1: In a large bowl, combine the sliced cucumbers, onion rings, and tomato wedges.
Step 2: In a small bowl or jar, whisk together vinegar, water, sugar, salt, pepper, and oregano (if using) until the sugar is dissolved.
Step 3: Pour the marinade over the vegetables and toss gently to coat everything evenly.
Step 4: Cover the bowl and refrigerate for at least 1 hour, preferably 2–4 hours, to allow flavors to meld.
Step 5: Before serving, stir the salad to re-distribute the marinade. Serve chilled.
Storage Information
Store the salad in an airtight container in the refrigerator for up to 4 days. The vegetables will continue to soften as they marinate, making it even more flavorful over time. Not suitable for freezing due to water content in the cucumbers and tomatoes.
