Ingredients:
For the oxtail:
1.5 kg oxtail pieces
2 tbsp vegetable oil
1 onion, chopped
2 garlic cloves, minced
2 carrots, chopped
2 celery sticks, chopped
2 tbsp tomato paste
2 cups beef stock
1 cup red wine (optional)
1 tsp dried thyme
1 tsp paprika
Salt and pepper to taste
2 bay leaves
For the mashed potatoes:
1.2 kg potatoes (Yukon Gold or Maris Piper), peeled and chopped
1/2 cup milk
50 g butter
Salt and pepper to taste
2 tbsp chopped fresh parsley (optional)
For the caramelised carrots:
4 large carrots, peeled and cut into batons
1 tbsp olive oil
1 tbsp butter
1 tbsp honey or brown sugar
