Meatloaf with Creamy Mashed Potatoes & Mixed Vegetables

Instructions:
step 1 Preheat oven to 375°F (190°C). In a large bowl, combine ground beef, onion, bell pepper, garlic, eggs, breadcrumbs, milk, Worcestershire sauce, parsley, salt, and pepper. Mix until just combined.
step 2 Transfer mixture to a loaf pan or shape into a loaf on a baking sheet. Mix glaze ingredients in a bowl and spread half over the top of the meatloaf.
step 3 Bake meatloaf for 50-60 minutes, adding the remaining glaze during the last 10 minutes. Let rest 10 minutes before slicing.
step 4 Meanwhile, boil potatoes in salted water for 15-20 minutes until tender. Drain and mash with butter and milk until smooth. Season with salt and pepper to taste.
step 5 Cook mixed vegetables according to package instructions or steam for 5-7 minutes until tender. Toss with butter, salt, and pepper.
step 6 Plate slices of meatloaf with a scoop of mashed potatoes and a generous helping of mixed vegetables for a classic dinner.

Storage and Reheating Tips:
Refrigerate leftovers in airtight containers for up to 4 days. Reheat meatloaf slices in the oven or microwave. Warm mashed potatoes with a splash of milk for creaminess, and reheat vegetables gently in a pan or microwave.
