Instructions:
Step 1: Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
Step 2: In a large bowl, mix together ground chicken, breadcrumbs, Parmesan, eggs, garlic, milk, Italian seasoning, parsley, salt, and pepper until well combined.
Step 3: Shape the mixture into a loaf and place it in the prepared pan or on the baking sheet.
Step 4: In a small bowl, mix together ketchup, brown sugar, and Dijon mustard. Spread evenly over the top of the meatloaf.
Step 5: Bake for 55–65 minutes, or until the internal temperature reaches 165°F (74°C). Let rest for 5–10 minutes before slicing.
Step 6: Garnish with extra parsley and serve with your favorite sides.
Storage Information:
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven or microwave until warmed through. For longer storage, freeze slices individually and reheat as needed.
