Melty Grilled Cheese Burrito

Instructions

Step 1: In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess grease.

Step 2: Add taco seasoning and 1/4 cup water to the skillet. Stir and simmer for 2–3 minutes until the sauce thickens. Remove from heat.

Step 3: Lay out a tortilla and layer 1/4 of the seasoned beef, rice, cheddar cheese, and mozzarella cheese in the center. Roll up the burrito by folding in the sides and rolling it up tightly.

Step 4: Heat a non-stick skillet over medium heat and melt 1/2 tablespoon of butter. Place the burrito seam-side down and grill for 2–3 minutes per side, until golden and the cheese is melted.

Step 5: Repeat with the remaining burritos, adding more butter as needed.

Step 6: Serve hot with optional toppings like chopped cilantro, sour cream, or salsa.

Storage Information

Store leftover burritos wrapped in foil or in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or toaster oven to maintain crispness. You can also freeze ungrilled burritos and cook from frozen when ready.
