Instructions:
step 1 In a bowl, whisk eggs with milk or water, salt, and pepper until well combined.
step 2 Heat butter or oil in a non-stick skillet over medium heat.
step 3 Sauté onions and bell peppers for 2-3 minutes until slightly soft.
step 4 Pour the egg mixture into the skillet and cook gently without stirring, allowing it to set at the bottom.
step 5 Once the eggs are mostly set, add the sautéed veggies, mixed greens, shredded cheese, and a sprinkle of bacon or prosciutto to one half of the omelette.
step 6 Fold the other half over the fillings and let it cook for another minute until the cheese is melty.
step 7 Carefully slide onto a plate and top with remaining bacon, scallions, and crumbled feta.
step 8 Serve immediately for the best texture and flavor.
