Middle Eastern Mixed Platter with Hummus and Lavash

Instructions:
step 1 Combine all lamb kofta ingredients in a bowl. Mix well and shape onto skewers. Refrigerate for 20 minutes.
step 2 In another bowl, mix chicken with oil, lemon juice, and spices. Thread onto skewers and marinate for 30 minutes.
step 3 Grill or pan-sear lamb koftas and chicken kebabs over medium-high heat until cooked through and slightly charred.
step 4 Toss chopped peppers and onions with olive oil, salt, pepper, and thyme. Roast or grill until tender and charred.
step 5 For hummus, blend chickpeas, tahini, garlic, lemon juice, olive oil, and salt. Add cold water until smooth and creamy. Drizzle with olive oil.
step 6 Toss cucumber, tomato, parsley, salt, and lemon juice for the salad.
step 7 Fry or bake seasoned fries until crispy.
step 8 Warm lavash bread slightly before serving. Assemble platter with lamb koftas, chicken skewers, hummus, vegetables, fries, salad, and bread.

Storage and Reheating Tips:
Store components separately in airtight containers. Meat and veggies can be refrigerated for up to 3 days and reheated in the oven or pan. Hummus can be stored up to 4 days in the fridge. Lavash can be reheated on a dry skillet or wrapped in foil and warmed in the oven.
