Instructions
Step 1: Preheat oven to 190°C (375°F) and lightly grease small foil trays or prepare foil sheets.

Step 2: In a bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, salt, pepper, paprika, and Italian seasoning until combined.

Step 3: Form the mixture into 4 small oval meatloaves.
/n
Step 4: In another bowl, toss potatoes and carrots with olive oil, salt, pepper, and garlic powder.

Step 5: Divide the vegetables evenly into foil packs or trays.
/n
Step 6: Place one mini meatloaf on top of each portion of vegetables.
/n
Step 7: In a small bowl, mix ketchup, brown sugar, and mustard, then spread over each meatloaf.

Step 8: Cover tightly with foil and bake for 35–45 minutes until meat is cooked through and vegetables are tender.

Step 9: Carefully uncover and broil for 3–5 minutes for a caramelized top (optional).

Step 10: Serve warm directly from the foil packs.
Storage and Reheating Tips
Store leftovers in airtight containers in the refrigerator for up to 4 days. Reheat in the oven or microwave until warmed through. These foil packs can also be frozen for up to 2 months; thaw overnight before reheating.
