Instructions
Step 1: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Step 2: In another bowl, combine the milk, egg, melted butter, and vanilla extract.
Step 3: Gradually add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
Step 4: Heat a mini pancake pan or æbleskiver pan over medium heat and lightly grease with butter or oil.
Step 5: Fill each cavity about three-quarters full with batter.
Step 6: Cook for 1–2 minutes until bubbles form and the bottoms are golden brown.
Step 7: Carefully flip each pancake bite using a skewer or fork and cook the other side until golden and cooked through.
Step 8: Transfer the pancake bites to a serving plate and dust generously with powdered sugar.
Step 9: Serve warm with butter and maple syrup if desired.
Storage and Reheating Tips
Store leftover Mini Pancake Bites in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for 15–20 seconds or warm them in the oven at 300°F (150°C) until heated through. These pancake bites can also be frozen for up to 2 months.
