Ingredients
2 lbs cleaned beef tripe (mogodu), cut into pieces
1/2 lb beef liver or kidney (optional twist), chopped
1 large onion, finely chopped
2 cloves garlic, minced
1 tablespoon grated fresh ginger
2 tablespoons cooking oil
2 teaspoons curry powder
1 teaspoon paprika
1 teaspoon ground coriander
1/2 teaspoon chili flakes (optional)
2 beef stock cubes
Salt and black pepper to taste
6 cups water (plus more as needed)
2 medium tomatoes, finely chopped
1/4 cup chopped fresh parsley or coriander (for garnish)
