Step 1: Preheat oven to 375°F. Slice a pocket into each chicken breast, being careful not to cut all the way through.
Step 2: In a skillet over medium heat, melt 1 tablespoon butter with olive oil. Add mushrooms and cook until browned and tender, about 5-6 minutes. Season with salt and pepper.
Step 3: Remove mushrooms from heat. Let cool slightly, then mix with mozzarella and Parmesan cheese.
Step 4: Stuff each chicken breast with the mushroom-cheese mixture. Secure with toothpicks if needed. Season chicken with salt, pepper, and Italian seasoning.
Step 5: In the same skillet, melt remaining 2 tablespoons butter and add garlic. Cook for 1 minute, then sear chicken on both sides until golden.
Step 6: Transfer skillet to the oven and bake for 20-25 minutes, until chicken is cooked through.
Step 7: Spoon garlic butter sauce over the chicken and garnish with chopped parsley before serving.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F or in the microwave until warmed through. Best enjoyed fresh for the juiciest texture.
