Instructions
Step 1: In a medium bowl, mix graham cracker crumbs, melted butter, and honey until well combined. Press the mixture into the bottom of a parchment-lined 8×8-inch pan. Chill in the refrigerator while preparing the filling.
Step 2: In a separate bowl, whisk together ricotta, honey, vanilla extract, powdered sugar, and salt until smooth and creamy.
Step 3: Spread the ricotta mixture evenly over the chilled crust.
Step 4: In a small bowl, combine chopped pistachios, dried cranberries, brown sugar, and melted butter. Sprinkle this mixture evenly over the ricotta layer.
Step 5: Cover and refrigerate for at least 4 hours or until fully set. Cut into bars and serve chilled.
Storage Information
Store bars in an airtight container in the refrigerator for up to 5 days. Best enjoyed cold. Freezing is not recommended due to the ricotta texture.
